Vegan Pasta Carbonara
Ingredients
Cook pasta according to directions, reserving 1/2 c. pasta water before draining. While pasta is cooking, dice and cook bacon in large skillet sprayed with cooking spray (or 1 tbsp olive oil) until brown and crisp, adding minced garlic during last 2 minutes. Toss cooked pasta with bacon and garlic. In a small bowl, mix together just egg, parmesan, nutritional yeast, miso, and black pepper. Slowly stir in pasta water. Pour over pasta and toss to coat.

Quick Barley Chili
(makes about 11 -1 cup servings) Ingredients
Add everything except beans and corn to a large pot, add water and stir. Note that once this chili sits it thickens quite a bit so if you prefer liquid in your chili, add a 15 oz can of tomato sauce at this point as well. Bring to a boil, then reduce heat to a simmer and cover and cook for 15 minutes. Add beans and corn and allow to cook another 5 minutes uncovered. |
