Quick Barley Chili
(makes about 11 -1 cup servings) Ingredients
Add everything except beans and corn to a large pot, add water and stir. Note that once this chili sits it thickens quite a bit so if you prefer liquid in your chili, add a 15 oz can of tomato sauce at this point as well. Bring to a boil, then reduce heat to a simmer and cover and cook for 15 minutes. Add beans and corn and allow to cook another 5 minutes uncovered.

Up until recently, I'd never heard of a "dirty Chai" latte. Apparently, I don't have to choose between tea and coffee anymore because when you add a shot of espresso to your Chai tea, it tastes amazing and is then effectively "dirty" (and I am addicted). However, as a breastfeeding mom, I have to be careful about how much caffeine I consume, while at the same time making sure I eat enough, including things that will help boost my milk supply. These lactation truffles are a great lactation booster for any breastfeeding mom, and have a tiny boost of caffeine (since we're all TIRED!). You'll find ingredients like moringa and milk thistle in the lactation booster powder I used in these truffles, which are a really nice snack to keep in your fridge for a quick, healthy, and calorie dense snack - great for those days when you can't seem to find the time to feed yourself! These lactation truffles are soy free, vegan, and refined sugar free, sweetened only by dates, which are packed with potassium, magnesium and fiber (amongst other things)!
Majka Dirty Chocolate Chai Lactation Truffles
(makes 12 lactation truffles) Ingredients: 2 tbsp Cacao Powder, plus more for dusting 12 Dates 2 scoops Majka Lactation Booster Powder ½ cup almond flour 1 scant tbsp Instant coffee dissolved in 2 tbsp water Pulverize dates in your food processor or blender. Add cacao and pulse to mix. Add Majka Lactation Booster Powder. Blend again. Add the dissolved instant coffee (or instant espresso if you prefer), and blend again. This mixture will be VERY sticky. Scrape the sides down, scrape the blades and mix again. Finally, add almond flour and pulse, then fully blend. Scrape mixture out and refrigerate overnight. Scoop out 12 balls and form with your hand. Dust with cacao powder. Notes: If you can’t find instant coffee, you can add in 2 tbsp of VERY strong coffee or espresso. If you can’t wait overnight, refrigerate at least 3 hours. You can decorate these with whatever you prefer – shaved chocolate, vegan sprinkles, cinnamon and sugar, etc. |
